Easiest Porcupine Meatballs Recipe

Hey guys! I haven’t posted in a while so I thought I’d provide you guys with a very simple recipe. This recipe has been passed down from my dad’s mother to my mother to me. It’s so simple that I can’t even mess it up (that says a lot since I mess up a lot of recipes).

All you need is:

  • Ground beef
  • 1/4 cup of Minute rice
  • Diced Onions
  • 2 cans of tomato soup
  • 1 can of water

The amount of ground beef and onions doesn’t matter so much but for the sake of this recipe I’ll say, 1 pound of ground beef and a quarter of an onion (I’m not the biggest fan of onions but you can add more onions if you’d like).

Mix together the meat, onions and rice and form compact balls. 

Place all the compact meatballs into a casserole dish and top with 2 cans of tomato soup and 1 can filled with water.

Cook at 325 degrees for 90 minutes. 

My mom recommends serving with mashed potatoes. She loves using the cooked tomato soup as gravy.
